Tabbouleh is one of those dishes that I always thought sounded good and exotic and healthy and that I should make one day, but never quite got around to. To be perfectly honest, I'm not totally sure that I am even spelling it correctly. So when I ran across this recipe in Everyday Food for Lemon Chicken with Tabbouleh I thought, here's my chance. Plus it had the added advantage of requiring a LOT of parsley, and since this is the time of year when my parsley looks like this:
I thought, yahoo, this is a sign. So the first thing I needed to get my hands on was bulgur. (Bulgur? Not even sure what aisle that is in). So I went to where I always go when faced with challenges of this sort:
Where of course they have bulgur, along with the other Very Healthy Ingredients that this recipe calls for. Here they are before:
And about 15 minutes later...
So now I can say yes, I have made tabbouleh. If anyone actually asks me.
